Rosemary Lemon Chicken Recipe
Cason and I are officially in Miami-mode. That means two things- eating healthy and working out. Pure Barre has been kicking our butt in the working out department but we’ve been getting a little bored in the eating healthy department. There is only so many bland chicken and green bean meals you can eat before you just want something different! That’s when we remembered my mom’s rosemary lemon chicken recipe. It’s light on the hips and full of flavor. This grilled chicken recipe is a staple in our house and it needs to be one in yours.
Rosemary Lemon Chicken Recipe:
:: chicken breasts
:: lemons
:: rosemary
:: olive oil
:: garlic
:: salt
:: pepper
Lightly brush olive oil on your chicken breasts. Season chicken with salt, pepper, and garlic. Cut up your lemons and place slices under and on top of the chicken. Do the same with your rosemary. The seasonings infuse best if you refrigerate it overnight but you can also prepare the dish and let it sit for a couple of hours- it’s just as good! Grill chicken 20 minutes a side.
This is the perfect summer meal. It’s light, refreshing, and there’s nothing like sitting out on the patio while Cason grills away. ( She recently burned a hole crater in our porch during a grilling accident so maybe it’s time for me to step up to the plate.) Nah, who am I kidding?
