Cowboy Caviar Recipe
Vacations are over, summer is coming to a close, and kids are reporting back to school. (That was like the most depressing sentence ever.) Kat and I have been reminiscing about the good life we were living last week and can’t wait to go back next year! Cowboy Caviar (I’ve also heard it called Redneck Caviar and Poor Man’s Salsa) is a simple appetizer we make every single year at the beach. It’s probably already a staple with many of you but it’s so easy I had to share! Who am I to hoard all these incredibly easy appetizers?!
Cowboy Caviar Recipe
:: 1/4 Cup olive oil
:: 1/4 Cup balsamic vinegar
:: 1/4 Cup sugar
Mix together the 3 ingredients listed above and set aside.
:: 1 can black-eyed peas, drained
:: 1 can black beans, drained
:: 1 can shoe peg corn, drained
:: 1 can Rotel tomatoes, do NOT drain
:: 1/2 bell pepper, chopped
:: 8-10 green onions, chopped
:: 1 large tomato, chopped
:: 3/4 tsp garlic salt
Combine remaining ingredients in a large bowl. Pour in dressing and mix well. Chill for several hours and serve with corn chips.
Don’t be too sad about summer coming to a close. Fall is just around the corner and you know what that means?! Football, trips to the mountains, boots, and candy corn!
